Mimosas are my all time favorite cocktail, with Pina Coladas coming in a close second, so I knew I wanted to combine my love of pineapple with my favorite cocktail- the mimosa! Mimosas are the perfect easy cocktail, they are so simple to make- you only need a fruit juice or citrus juice, and champagne! They are a classic brunch cocktail, and this version gives the classic Mimosa a tropical twist. We love to dress ours up with pretty garnishes and pineapple makes that so easy. Here’s how we put this Pineapple Mimosa recipe together.

Pineapple Mimosa Ingredients

Just two ingredients make this cocktail. One part pineapple juice, one part champagne.

  • 3 oz. pineapple juice- fresh if you can get your hands on it, or Dole pineapple juice is delicious!
  • 3 oz. your favorite champagne – we just used a budget friendly dry champagne, but use whatever you love

Plus, if you want to garnish, a fresh pineapple wedge and a pineapple frond or two. These are so perfect for making a truly pretty drink. As for bar ware, you’ll just need your favorite champagne flutes to serve up a few of these. We mix them together right in the flute glass, so there’s no need for a cocktail shaker or anything like that.

It doesn’t get simpler than that!

How to Make a Pineapple Mimosa

1. To your champagne flute, add 3 oz. pineapple juice

2. Top with champagne, about 3 oz. worth.

3. Stir, and garnish, as desired.

Can I use sparkling wine instead of champagne?

Yes! Technically, using Prosecco or sparkling wine, you have made more of a Bellini, but if you like sparkling wine better than champagne, by all means customize your ideal drink!

How do I make a large batch of Pineapple Mimosas?

You can make any size batch you like by combining equal parts of the fruit juice and champagne. You can combine a whole bottle of champagne with roughly 3 1/4 cups of pineapple juice.

Can I trade the pineapple for another juice?

Yes! A simple twist is to exchange the juice for any flavor you like to create many different Mimosa variations. Prefer mango juice? Use that to make a Mango Mimosa! You can change this simple drink to any flavor you like.
