Strawberry Pineapple Mimosa
We love this delicious Strawberry Pineapple Mimosa for Summer. To make it, we used pineapple and a strawberry puree made from fresh strawberries! It is giving us serious tropical vibes. Then, we added champagne of course. You don’t need a special occasion to enjoy these delicious mimosas, they are perfect for any Sunday brunch, or just because.
Strawberry Pineapple Mimosa Ingredients:
- 2 oz. pineapple juice
- 2 ounces strawberry puree
- 2 oz. champagne or prosecco (opt for Sprite for a virgin mimosa)
- Pineapple wedges, fresh strawberries for garnish
For serving you’ll need champagne glasses (stemless are a lot of fun, as well) or your favorite cocktail glass.
How to make strawberry puree
To prepare the strawberry puree, in your blender or food processor, blend up 6 strawberries, 1/2 tbsp. sugar, and a splash of pineapple juice. Blend until smooth, and if desired, strain through a fine mesh strainer. This makes enough puree for 3-4 mimosas.
These mimosas come together in just a few simple steps.
Directions:
To your champagne flutes, add 2 ounces strawberry puree, 2 ounces pineapple juice, and 2 ounces champagne. Garnish with a small fresh pineapple wedge and fresh strawberry.
Substitutions & Tips:
- You can also add a splash of orange juice if you miss that orange flavor in the Pineapple Strawberry mimosa.
- You can opt for sparkling wine, or prosecco, instead of champagne in these. If you want a virgin mimosa, use a lemon-lime soda, ginger ale, club soda, or sparkling water. For non-alcoholic mimosas, you may want to up the pineapple juice and strawberry puree amounts and use just a splash of the sparkling water or soda so that you still have lots of delicious flavor.
- The fresh fruit is optional, you don’t have to garnish your drinks but it does make for a fun presentation.
What is the best champagne for mimosas?
When making mimosas it is best to use a dry champagne, so look for Brut or “extra Brut” on the bottle. If the bottles are labeled “dry”, skip these, because they are actually sweeter, in case champagne wasn’t confusing enough.
How can I make a large pitcher of Strawberry Pineapple Mimosas?
You can certainly make enough mimosas for a larger group. Start by making a larger batch of your strawberry puree. I would do 2 cups of strawberries, 2 tbsp. sugar, and about 1/4 cup of pineapple juice and blend. Add more pineapple juice, if needed. Then, combine that with an entire bottle of champagne and about 3 cups of pineapple juice. You can easily sample the mimosas and adjust the flavors, as needed.
