Pumpkin Spice Cake with Cream Cheese Frosting Directions
Step 1: Preheat your oven to 350 degrees Fahrenheit and spray a 9×13 pan with nonstick cooking spray, set aside.
Step 2: In a large bowl, whisk together cake mix, pumpkin puree, and 3 eggs. It gets pretty thick, so feel free to break out the hand mixer or stand mixer, if you need it!
Step 3: Pour cake mixture into prepared pan and smooth out evenly.
Step 4: Bake for 28-30 minutes, until a toothpick inserted in the center of the cake comes out clean.
Step 5: Meanwhile, prepare your frosting. In a large mixing bowl, beat cream cheese 1-2 minutes, until smooth.
Step 6: Add in powdered sugar and vanilla. Mix together until smooth and well combined.
Step 7: In a separate bowl, beat heavy cream for 4-5 minutes, until whipped cream is formed.
Step 8: Add whipped cream to the cream cheese mixture, and mix until well combined, 1-2 minutes more.
Step 9: Once cake has baked, cool cake completely to room temperature, frost and enjoy! If you use a glass baking dish, try cooling on a wire rack to speed up the process!

Recipe FAQs
How does this compare to homemade pumpkin cake?
If you have a tried and true homemade pumpkin cake, that is great. I love simplifying things and keeping life easy with delicious desserts made with boxed cake mix. The cake turns out so light, fluffy, and moist. It’s pretty hard to mess up this recipe, so I definitely recommend this method for an easy, no-fail pumpkin cake. The texture of the cake really cannot be beat.
Can I make this as a Bundt cake?
Yes! The spice cake box tells us to bake a Bundt cake for 38-43 minutes, and you can absolutely do that with this recipe. For the frosting, instead of spreading it across the cake, use a piping bag and drizzle it over the top of the Bundt cake! Yum!
How should I store leftovers of this cake?
You can cover with aluminum foil or plastic wrap (make sure it is wrapped well), for up to a few days, but for the longest lasting cake and the best results, store in an airtight container. Be sure and keep this cake refrigerated, due to the cream cheese frosting.
Can I make this with boxed yellow cake mix?
You can, but you’ll want to add some pumpkin pie spice to the mix. The spiced cake mix gives us all the spices we need for a delicious pumpkin cake, but with using yellow cake mix you’ll want to add some. I recommend at least 1-2 tsp. of pumpkin pie spice when using yellow cake mix.
