Lemon Poppy Seed Muffins with Lemon Glaze
One of our favorite muffins is Lemon Poppy Seed Muffins! During the Spring and Summer, we love lemon recipes, and this is a fun idea for weekend breakfasts, snacks, or just whenever you want to have them! For these, we used whole milk yogurt to keep them moist, and the lemon glaze on top is just perfect. Let’s get into how to make them!

Lemon Poppy Seed Muffin Ingredients
For the muffins, you’ll need-
- 3 cups all purpose flour
- 2 tbsp. Poppy seeds
- 1 tbsp. Baking powder
- ½ tsp. Baking soda
- ¼ tsp. Sea salt
- 1 cup granulated sugar
- 1 ½ cups plain whole milk yogurt (be sure to use plain yogurt and not greek)
- 3 tbsp. Fresh squeezed lemon juice
- 1 ½ tbsp. Grated lemon zest
- 2 large eggs
- 8 tbsp. Unsalted butter, melted and cooled
Then, for the lemon glaze-
- 1 cup confectioners sugar
- 2 tbsp. Fresh squeezed lemon juice
These muffins are easy to make, here’s how to do it-
Lemon Poppy Seed Muffins Directions
- Preheat oven to 375 degrees Fahrenheit, and grease a 12 cup muffin tin, or use cupcake liners
- In a large bowl, whisk together flour, poppy seeds, baking powder, baking soda, and sea salt.
- Set aside.
- In another bowl, whisk together sugar, yogurt, lemon juice, lemon zest, and eggs.
- Fold the flour mixture into the yogurt mixture, slowly in small batches, mixing just enough to get rid of any flour clumps. Be careful not to overmix.
- Gently fold in the melted butter
- Use a cookie scoop or small measuring cup to divide the batter evenly among your 12 cups.
- Bake in a 375 degree oven for 20-25 minutes, until a toothpick inserted into the center of the middle muffins comes out clean.
- Allow muffins to cool fully before adding glaze.
Lemon Glaze
The glaze is super simple, here’s what to do-
- To make the glaze, whisk together confectioners sugar and lemon juice.
- You want the glaze to be a little thicker, if it’s too runny it will run right off of the muffins.
- To thicken, simply add additional confectioners sugar by the tablespoon until you reach the right consistency.
- If it is too thick, add additional lemon juice a little at a time.
- Be sure to taste to see if it is too much lemon or too much sugar and adjust.
- Drizzle the glaze over the muffins and enjoy.
- Store any leftovers in an airtight container in the refrigerator.
