This Pina Colada Jello Shots recipe is so easy to make and so delicious! Made with pineapple juice and cream of coconut, these little shots really emulate the classic Pina Colada flavors. They’re easy to make with just a few ingredients, and are sure to be a hit.

Piña Colada Jello Shots Ingredients

  • 2 packets of knox gelatin
  • 3 cups pineapple juice, divided (2 cups for boiling, and 1 cup pineapple juice, cold)
  • 2 tbsp. Cream of coconut
  • 1 cup Malibu coconut rum
  • Whipped Cream for topping
  • Maraschino cherries for topping
  • Optional, fresh pineapple chunks for garnish
  • 16 (2 oz.) plastic jello shot containers

I really loved making these with the knox unflavored gelatin and pineapple juice, it gives a lot more of the Pina Colada flavors compared to just using pineapple jello. Don’t let that scare you though, knox gelatin is so easy to work with. Here’s how to make these-

How to Make Pina Colada Jello Shots

1. Place plastic cups onto a shallow baking sheet or cookie sheet. A muffin pan will also work!

2. In a medium sauce pan, start by making the gelatin mixture. Add 2 cups of pineapple juice, and sprinkle in 2 packets of knox gelatin.

3. Whisk to combine.

4. Heat over medium low heat until just steamy, do not boil.

5. Remove from the heat and into the hot pineapple juice, whisk in additional 1 cup of pineapple juice, cream of coconut, and cup of coconut rum.

6. Divide the jello mixture evenly between the plastic cups.

7. Move to the refrigerator to chill for at least 4 hours.

8. Before serving, top with whipped cream, fresh small pineapple pieces, if desired, and a maraschino cherry.

Where can I buy jello shot cups?

We have bought jello shot cups that are 2 and 3 oz. from Amazon, and we even find the 2 oz. jello shot cups used in this recipe, at our local Walmart!

Can’t I just make these with pineapple jello powder?

Technically, you could just use a box of island pineapple jello mix. However, this recipe does such a great job of capturing the flavors of the classic piña coladas we all love. I just don’t think Pina Colada when I taste pineapple jello. You really need to have the pineapple juice and cream of coconut found in this unique jello shot.

I don’t need boiling water?

Nope! Normally in our jello recipes you’d see a couple cups of boiling water and a cup of cold water, but for this recipe we used all pineapple juice so we didn’t lose any of the flavor. We don’t even boil it, just heat it until we start to see the steam rise, and this method works perfectly every time for getting Knox gelatin to set!

Can I use coconut cream?

Coconut cream is not the same as cream of coconut by Coco Real. Coconut cream isn’t as sweet, and cream of coconut pours easier for cocktails, and jello shots. I don’t recommend substituting the cream of coconut, you won’t be disappointed!

Substitutions & Tips:

  • Don’t have Malibu rum on hand? You can swap for white rum or another brand of coconut rum. This shot has a lot of coconut flavor so a regular rum should still work just fine.
  • Plastic shot cups work best, I can be really difficult to enjoy jello shots out of a glass shot glass.
  • We used Dole pineapple juice, but you could use real pineapple juice, as well, just make sure the juice comes from a ripe pineapple for sweetness. This may also cut down the sweetness some if you find these shots to be a bit too sweet.
  • If your jello shots are too solid, you may have used too much knox gelatin. This can make them more chewy, if this happens, try again with less knox. They’re worth it!
  • You could also garnish these with a small pineapple wedge.
